This one if one of my favs! You have to try it now that the colder weather is starting to kick in. I use almond milk (try soy or rice also) in place of reg milk. Use all organic ingredients to explode it with maximum healthiness!
6 medium carrots, shredded
3 medium potatoes, shredded
1/4 cup onion, chopped
2 cups of vegetable broth
2 cups of water
1 tsp of nutmeg
3/4 cup of 1% organic milk ( can use almond or rice milk)
4 TBS of Smart Balance butterDirections:
1. In a large pot put shredded carrots, potatoes, onion, vegetable broth, water, and nutmeg and bring to a boil. Reduce to a low heat, stirring occasionally.
2. Once the vegetables are tender, remove from heat and blend by portions in blender. Clean pot and put blended mixture back into clean pot and onto stove.
