Four 15oz cans of organic black beans (or 4 cups of cooked)
8 cups of water or vegetable broth
2 carrots, diced
1 small red onion or 3 scallions, chopped
Handful fresh cilantro, chopped (optional and to your taste)
4 cloves garlic, finely chopped
1 slice ginger (optional)
2 1/2 tsp chili powder
2 tsp ground cumin
Finely chopped jalapeno (optional for a kick)
Put all the ingredients in a big pot and bring to a gentle boil.
Reduced heat to low and cook for 2-4 hours.
Place the soup into the blender or food processor for a pureed soup and blend until smooth. If you want the soup to be partially pureed with some beans in it, just put half of the soup into the blender and blend until smooth. Mix back into the soup you did not blend.
You can top with cilantro, lime wedge, scallions and a drizzle of soy sour cream (or organic sour cream).
