Salmon Cakes

I love this recipe! It is a dear friend's recipe that I spun to turn up the health factor. Salmon is loaded with Omega's and heart healthy yumminess. Try these patties when you need to add a twist to your salmon. Makes the low fat Naked Moxie approval too! Nutrition info per patty: Calories 375; Carbs 31g; Fat 10 g ; Pro 31g.

Ingredients

  • Salmon Fillet 1/2 lb
  • small red bell pepper, chopped
  • small yellow bell pepper
  • celery stalk, chopped
  • 3 green onions, chopped,
  • garlic, minced to your taste
  • 1 tsp cayenne pepper
  • 1 1/2 tsp Dijon Mustard
  • 1 organic egg
  • 1 1/2 c bread crumbs
  • handful cilantro
  • 2- 3 tsp olive oil

Instructions

  1. Bake Salmon Fillet at 350 for 15 to 20 minutes,until turns opaque color
  2. Let cool for 10 minutes
  3. Flake apart with fork and place in bowl
  4. Mix in red peppers, celery, green onion, cilantro garlic, cayenne pepper, and Dijon mustard.
  5. Mix in egg and bread crumbs (not too sticky, not too dry)
  6. Shape into 8 patties and heat in olive oil until brown.

Hi Lisa. I love salmon cakes and forget about them, but they make such a lovely meal with a fresh green salad. Thanks for a reminder and a lovely recipe to go with it!

I saw your comment @ Adrienne’s….this type of recipe is great! gluten free bread crumbs are an easy enough sub….and as far as the top 8 goes, there is only eggs here! Perfect!

Thanks Tessa! I did not realize at first it was allergy free link party! lol So, I felt bad that it was not perfected. But, yes if we use gluten free breadcrumbs and even an egg substitute it can be an awesome allergy free recipe! Not to mention, vegetarian! Thanks..:)
