This recipe I just love. It was born out of trying out many Asian sauces that are not loaded with harmful ingredients. I found two I love from Wildtree and Simply Asia and no matter what veggie you toss around, this dish is delicious. Healthy veggies with a clean sauce. Easy and low fat too!
Ingredients
- 2 cups snap peas,
- 2 cups broccoli, cut or diced
- 2 cups red bell pepper, sliced
- 1 cup carrots, shredded
- min corn
- 1 cup mushrooms, sliced (optional)
- extra firm already cubed tofu ( 1/2 package) or 2 organic chicken breasts, sliced in strips or cubes
- 1-2 tbsp of Asian stir fry sauce Wildtree Thai Sesame Sun Butter Sauce or Simply Asia, but try to make this choice healthy.
Instructions
- Open the package, drain out the water and put the cubed tofu into a wok or skillet
- Add a little extra virgin olive oil to pan and toss the tofu around a bit ( 3-4 minutes)
- ( If you chose chicken you toss around in pan for about 8 minutes)
- Next, add the heart happy veggies.
- Toss them up a bit too. ( 5 min) toss this all around. Add a bit of water if sauce is a bit thick.
- You can serve over good grain choice, eat as is or even add some Asian noodles to it.
